ANS 251 – Principles of Animal Foods Technology (3)
Explore the factors impacting meat quality and the processing of meat, milk, and eggs into food for human consumption. Investigate historical development of the U.S. meat industry. Explain biological and chemical principles that determine meat quality. Identify governing agencies that oversee and regulate inspection and food safety protocols. Assess economic influence of meat, dairy, and egg products. This course may be subject to Enforced Prerequisites that restrict registration into the course.
